I like Paradise India in Overland Park... I have only been once but Indian food has lots of vegetarian options. Their food is delicious. Greek places are great for vegetarians too - Mr. Gyro's veggie platter

The Casbah in Lawrence! It's all vegetarian, and lots of it is vegan. they focus on organic and local. They make patties in many varieties (think "hot Pocket" only good for you). The pizza style one I had two days ago is awesome, and only $3.50!!

Cafe Augusta in Lenexa has several excellent vegetarian choices. My favorite is the Vegetarian Ciabatta: Chevre, roasted red pepper, artichoke, and tomato with blueberry pesto on a ciabatta roll.

Eden Alley Cafe is always a great place to go, but I only do it once in a great while due to costs. I tend to go to Planet Sub for a quick veggie sub if I need something healthy and low priced. Waldo Pizza and Pizza Fusion are great. Atlanta Bread Company, Jason's Deli and Schlotzky's Deli all come to mind as places that all offer great vegetarian dishes at a fair price.
